Ingredients

  • 1½ cups Hathi Brand 100% Whole Wheat Chakki Atta
  • 1 cup mixed dried fruits (raisins, cranberries, apricots, chopped)
  • ½ cup chopped nuts (walnuts, almonds, cashews)
  • 1 cup yogurt or applesauce (as an egg replacement)
  • ¾ cup brown sugar
  • ½ cup oil or melted butter
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon powder
  • ½ tsp nutmeg powder
  • ½ tsp ginger powder
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • Juice of 1 orange.

Method

  • Preheat your oven to 350°F (175°C). Grease a 9-inch cake pan and line it with parchment paper.
  • Soak the mixed dried fruits in the orange juice in a small bowl and set aside for about 10 minutes.
  • Whisk together Hathi Brand 100% Whole Wheat Chakki Atta, baking powder, baking soda, cinnamon, nutmeg, and ginger powder in a large mixing bowl.
  • Mix the yogurt or applesauce, brown sugar, oil or melted butter, vanilla extract, and orange zest in a separate bowl until smooth and well-blended.
